Roasted Potato Medley
3 russet potatoes skin left on cut into about 4 cups
1ea orange, red bell pepper large diced pieces
2 jalapeƱos sliced (remove seeds for lesser heat/optional)
1/3 head broccoli cut off the stem & sliced small
4tbs olive oil (just enough to coat)
Shan Style seasonings
Place all ingredients in a glass baking dish, toss in the olive oil to coat & season with your choice of Shan Style. Cook in a 400 degree oven for a total of 45 min, stirring with a metal spatula every 15min.
Tip: substitute with yams use a peeler to remove the skin & cut smaller dices to ensure even cooking since they take longer than the russets.
